About this time of year (especially for all those you know in the northeast) a
yearning for basking in the glorious Mediterranean takes hold! However if you can’t get there try these sunshine filled nibbles and at least you will look Mediterranean beach
ready. Kale is a superfood that is chock filled with vitamins and antioxidants
and this recipe is quick to make and a crowd pleaser in my house. Find a friend
with a kale patch or your local farmer as the fresher the kale the less bitter
it will be! If not grab a bunch at your local store and get massaging!

Gone to the Med Kale chips

1 bunch curly kale
2 tbsp tahini ( sesame seed paste)
2 tbsp lemon juice
2 medium garlic cloves, crushed

Remove leaves from the stocks! Mix tahini, lemon, and garlic to form a paste. Massage
onto leaves. Place leaves on a baking sheets lined with parchment paper and bake
at 325 for 13-15 minutes until just crisped ! Watch them as burnt ones dont taste good!
Let cool and munch happily.
