Easy Peasy Good for you Almond Cakes

Crave a cake? Fancy one that is as good tasting as it is good for you?  Look no further than these super quick, nutrient dense scrummy cakes!  These cakes use almonds and cassava flour which make them naturally gluten free and chock full of body hugging goodness! Eggs have impressive health credentials too as both the whites and the yolks are rich in protein, vitamins, and essential minerals like betaine and choline which promote heart health and are essential for supporting that all important brain. So if the cake craving kicks in or you just have a reason to celebrate get cracking and make your friends and families tummies do a cake filled happy dance!

Easy Peasy Good For you Almond Cake

6 mini bundt cakes or 2 – 8 inch rounds

4 large eggs, responsibly laid

4oz (113g) unsalted butter

2/3 cup (113g) coconut sugar

1/3 cup(56g) organic cassava or unbleached flour

3/4 cup (113g) organic or steamed whole almonds, ground until very fine like flour

1/2 tsp aluminum free baking powder

1/4 tsp organic almond extract

1/4 cup all fruit berry jam

Frosting

1/2 tsp almond extract

1/3 cup (3oz) unsalted butter

8oz cream cheese

1/8 tsp vanilla bean powder

2 tsp hot water

1/2 to 2/3 cup (70g) organic powdered sugar or finely ground coconut sugar

Mix all the cake ingredients together in a bowl with electric beaters until all combined. Pour into greased and floured cake pans or mini bundt pans and bake at 350F for  about 15-18 minutes until top springs back.

Beat together frosting ingredients and spread between layers of cooled cakes and top with jam and drizzle extra frosting on top.
