It was April fools day however this ‘good for you chocolate chip cookie’  is no April fools joke! They are as delicious as any decadent homemade favorite but packed  with  protein, fibre, vitamins, and minerals too! These cookies are gluten free and  really low in sugar,  so no brain fog or tummy troubles after munching on a few of these! And a few is all you need as they satisfy not just your sweet tooth  but also your body. For a dairy free option, ghee can be used instead of butter.  Ghee,  also known as clarified butter, is  butter with the dairy milk solids removed. It can be bought or easily made at home by heating butter until just below boiling, cool, and then the milk solids will seperate and remain at the bottom so the ghee can be skimmed off the top! Ghee is shelf stable and can last many months without going bad! Whip up a batch of these after school treats this week and delight your taste buds and nourish your body!

Good For You Chocolate Chip Cookies

Makes 12-13 cookies

1/4 cup (2oz) butter or ghee
1/4 cup (1.5oz) coconut sugar
1 large organic egg
1 cup (4oz) ground almond flour
1 tsp  vanilla bean paste or extract
1 tsp unsulphered molasses
1/2 tsp baking powder
2-3 oz dark chocolate pieces or chunks

Mix the butter or ghee, vanilla, and molasses together. Beat in the egg and then add the almond flour and baking powder until thoroughly combined. Add the chocolate and drop by tablespoon onto a piece of baking parchment to make about 12-13 cookies. Bake at 350f for 8-10 minutes until lightly browned. Remove press down each cookie with the back of a spatula and cool. Enjoy!
