Now there are crackers and there are crackers! Why Gangster crackers? Thanks to Ramona Holloway (cohost of Charlotte Today) as she was munching these during my recent demo she said, “These are just too gangsterish!” She went on to say, “Making your own crackers is like making your own panties!” Normally, in the interest of time and convenience, I would not attempt homemade crackers or panty making. The good news for my family is I am not going to attempt the panties. However, recently I have had difficulty finding tasty crackers with wholesome ingredients at a reasonable price. I thought how hard can it be to make crackers? I took to my blender armed with a few simple seeds and nuts, a bit of herb from my fall garden, and some dried fruit. Voila! After a few batches I think I have it! These can be made ahead and served with cheese, fruit, and nuts, or can be used for fall dips and spreads. They can also be a tasty snack to grab on the go. Truly delicious, nutritious, quick, and affordable. Give it a go but leave the pantie making to Victoria Secret!
Gangster Crackers
Makes about 2 dozen
1/2 cup (2oz) raw unsalted sunflower seeds
1/4 cup (1 ½ oz) blanched slivered or whole almonds
1 date, destoned
3 dried figs, destemmed
1 tbsp fresh rosemary leaves, unchopped
1 pinch sea salt, optional
1 tbsp water
Method
Place all the ingredients except the water in a blender and blend on medium low until very finely chopped and starting to come together. Remove, add water, and mix together into a ball. Place on a piece of parchment paper and cover with another piece of parchment paper. Roll out to a thin 10 inch round between the parchment sheets. Remove the top sheet, place the crackers on a baking tray, and bake at 325F (160C) for 10 minutes. Turn off the oven and leave in the oven another 10 minutes. Remove and place parchment paper with the crackers on it on a cool surface to cool. Cut and store at room temperature in an airtight container.
