Veggie Spiral

Veggie and Herb Feta Spiral
Serves 4-6

3 medium zucchini
3 medium tomatoes
1/2 cup mild soft goats cheese
1/2 cup feta cheese
1/2 tsp dried oregano plus a bit extra for sprinkling
1 large garlic clove crushed
a little extra virgin olive oil for drizzling

Slice the zucchini thinly about 1/8 inch on a mandolin if possible. Mix goats cheese, feta, oregano, and garlic. Spread some thinly between 4 slices of zucchini.and stack them. Roll them into a loose spiral and place in the middle of a 9 inch baking dish. Spread a thin layer of cheese mixture on each of the rest of the zucchini slices and wrap each around the spiralled zucchini in the center until the spiral is nearly filling the dish. Slice the tomatoes thinly and place slightly overlapping around the outside of the zucchini spiral. Sprinkle the mixture with a little oregano and bake at 375F for 30-35 minutes until lightly browned and bubbling. Remove and drizzle with a little olive oil and cut into wedges to serve.
