Inside Out Apple Crumble

A highlight of autumn for me is the availability of my favorite honey crisp apples and what could be better than to pair them in a crumble! Crumbles are one of the very quickest puds to make and this one is even simpler and is good for breakfast too. I like to think of this one as an inside out crumble as it has the apple on the outside. The crumble topping with gently cooked apples and creamy yogurt is as delicious as it is good for you and if you use the Black Sheep’s yogurt you are in for a treat! It is extra creamy, easier to digest, and higher in protein than cows yogurt and it tastes simply divine! I also recommend the Purely Elizabeth granola as it is gluten free and made with coconut sugar and coconut oil if you are short on time and cant make homemade.

After serving this for dessert to a bunch of friends the other night a number of them made it for themselves everyday that week for brekky! I would call that a successful dish!

Inside Out Apple Crumble
Makes 2 apples

2 organic honeycrisp or gala apples
¼ cup (1oz) granola (I love the brand Purely Elizabeth or homemade)
1/4 tsp cinnamon powder (I like ceylon if you can get it as it is a milder taste and has increased health benefits)
1/4 tsp coconut sugar
½ cup sheep or greek plain, ginger, or vanilla yogurt (I love Black Sheep Yogurt available at Healthy Home Market, Whole Foods, and other select stores)

Core the apples by just cutting around the top of the core and then scooping out the seeds leaving a firm bottom. Place the apples on a baking sheet, sprinkle inside with a little cinnamon and sugar, and bake at 375F for about 20-25 minutes until softened. Remove from the oven and spoon yogurt inside and sprinkle with granola. Serve warm with extra yogurt if desired!
